VEGAN “Chicken” & Broccoli CASSEROLE
2 lbs. fresh broccoli crowns, cut into spears
2 cups of “cheeze” melted and mixed with veggie broth – please ask me if you have questions.. (or if not vegan, any cheese sauce)
3-4 cups strips of any vegan “chicken” or “turkey” substitute, soaked in a HOT “chickeny” broth
6 cloves garlic, chopped
fresh cut herbs
salt and freshly ground pepper
2 cups or so of cooked alphabet pasta – FUN for the KIDS!
1 T. lemon juice- add to the cheese mix
2 cups bread crumbs
Preheat the oven to 400 degrees F.
Spread the chopped broccoli in the bottom of 1/9 x 13″ baking pan. Cover that with the “chicken” sub and pasta. Sprinkle with salt and grind pepper, garlic, onion salt.. any other spices that you like over that to taste add fresh cut herbs to the mix.
Spread the vegan “cheese” over the top
Sprinkle evenly with the breadcrumbs and then spread and push down so some of the breadcrumbs are in the “cheese”.
Bake for 20 minutes and serve hot.

Boil vegetable broth, squirt in the Bragg Amino Acids. Once boiling, add TVP and mix.. turn off flame and let the TVP soak up the broth. Wait until the TVP cools – you can place in the fridge if you like. Once cool…
Place all ingredients together.. mix. and cool.

Halloween Spiderweb Pizza
Note: I thought this pizza was vegan, but the cheese I used has an animal enzyme in it. However I did find the product that is vegan. Read below….
- Whole Wheat Pizza Dough, I had left over dough from last week that I had put in the freezer. However, if you you don’t mind non-vegan, you can use just any pizza crust.
- 1/2 cup Pizza Sauce, this recipe I made up this morning. Yummy!!!
- a few sheets of Vegan “cheese”. I used Veggie Slices, Smoked Provolone Flavor.
Note: I thought this “cheese” was vegan, but it is NOT!!! However, they do have a product that is:
Preheat oven to 400 degrees.
Place rolled out pizza dough on a baking stone or sheet, pre-sprinkled with corn meal to prevent sticking.
Top with Pizza Sauce.
Cut “cheese” into stripes and place around pizza like a web.
Bake pizza for 10 minutes until cheese has melted.
***Note: You may want to pre-bake your pizza dough for 5-7 minutes before putting the pizza sauce on.
Cut one whole olive in half for the body and abdomen. And slice an olive and then, slice again one slice in half for legs. Cut two smaller pieces for the pedipalp ( the two front end thingys). Assemble spider on the pizza.

My family, Mariana, Pork and Joey headed out to the San Bernardino Mountains to Green Valley Lake for a three day camping trip.
We settled in at camp spot 33. Which is my favorite number. Actually, any number with 3 in it is my favorite.
That number pretty much guaranteed us a good time.
Nature + food + guitars + drums+ drinks+ friends + husband and a fire= ???
