Pickled Red Radish and Onions

Ingredients
- 4 cups sliced radish (I bought four bunches for 1$ at Henry’s Farmers Market)
- 1 red onion, cut into thin wedges and separated


- 2 cups rice vinegar
- 2 cups sugar
- 6 teaspoons salt
Directions
- Slice radishes by hand or use the slicing blade of a food processor. Place radish slices and onions in a large jar or bowl that can be covered. In another bowl, stir together vinegar, sugar, and salt until sugar is dissolved. Pour over radish mixture.
- Cover and refrigerate at least 8 hours or overnight before serving.
